Creamy Mango Protein Pancakes
273 calories, 22g of protein. A sweet, high-protein twist on our egg white wrap. Soft vanilla pancakes filled with a light cream cheese and Greek yoghurt cheesecake mix, finished with fresh raspberries, blueberries and mango.
A sweet, high-protein version of our classic egg white wrap (steak recipe here). The pancakes are made golden with a pinch of turmeric and a touch of vanilla, then filled with a whipped cream cheese cheesecake mix and topped with fresh fruit. Naturally low in sugar, and feels like dessert.

Pancakes
Makes 4 pancakes | 10 minutes
Ingredients
- 8 large egg whites (or ½ cup liquid egg whites)
- 1 tsp vanilla extract
- ¼ tsp ground turmeric
- 5g xanthan gum (approx. ⅛ tsp)
- Salt to taste
Method
- Blend the egg whites, vanilla, turmeric, xanthan gum, and a pinch of salt until smooth and slightly frothy.
- Heat a non-stick pan over low-medium heat. No oil needed, but a light spray helps.
- Pour about 3 tbsp of batter into the centre of the pan, then swirl the pan to spread it thin - like a crepe.
- Cook until bubbles appear all over the surface (1–2 minutes), then flip carefully with a large spatula.
- Cook for another 1–2 minutes, then remove and repeat. Makes 3–4 pancakes depending on pan size.
A true non-stick pan is key here. If your pan is not non-stick, the pancakes will tear. Take your time with the swirl - thinner is better. The turmeric is just for colour, you won't taste it.
