Creamy Mango Protein Pancakes

273 calories, 22g of protein. A sweet, high-protein twist on our egg white wrap. Soft vanilla pancakes filled with a light cream cheese and Greek yoghurt cheesecake mix, finished with fresh raspberries, blueberries and mango.

A sweet, high-protein version of our classic egg white wrap (steak recipe here). The pancakes are made golden with a pinch of turmeric and a touch of vanilla, then filled with a whipped cream cheese cheesecake mix and topped with fresh fruit. Naturally low in sugar, and feels like dessert.

Pancakes

Makes 4 pancakes | 10 minutes

Ingredients

  • 8 large egg whites (or ½ cup liquid egg whites)
  • 1 tsp vanilla extract
  • ¼ tsp ground turmeric
  • 5g xanthan gum (approx. ⅛ tsp)
  • Salt to taste

Method

  1. Blend the egg whites, vanilla, turmeric, xanthan gum, and a pinch of salt until smooth and slightly frothy.
  2. Heat a non-stick pan over low-medium heat. No oil needed, but a light spray helps.
  3. Pour about 3 tbsp of batter into the centre of the pan, then swirl the pan to spread it thin - like a crepe.
  4. Cook until bubbles appear all over the surface (1–2 minutes), then flip carefully with a large spatula.
  5. Cook for another 1–2 minutes, then remove and repeat. Makes 3–4 pancakes depending on pan size.

A true non-stick pan is key here. If your pan is not non-stick, the pancakes will tear. Take your time with the swirl - thinner is better. The turmeric is just for colour, you won't taste it.

Cheesecake Filling & Toppings

Serves 4

Ingredients

  • 200g cream cheese (we used Killowen)
  • 225g Greek yoghurt (Fage Total 0%)
  • 1 scoop vanilla protein powder (we used MyProtein Vanilla)
  • 200g fresh mango, sliced into strips
  • ½ cup raspberries
  • ½ cup blueberries

Method

  1. Whisk the cream cheese in a bowl until smooth and softened.
  2. Add the Greek yoghurt and protein powder and mix until light and fluffy.
  3. Chill for 10 minutes if you have time. The texture firms up beautifully.

To Assemble

Method

  1. Lay a pancake flat and spread a generous spoon of cheesecake filling down the centre.
  2. Top with a handful of the berry and mango.
  3. Roll or fold and serve. Lovely with a drizzle of honey
