ingredients (serves 4)
2 cups oats (blitzed to a flour)
1 tsp baking powder
1 tbsp cocoa powder
1 cup milk of choice
2 eggs
2 double espresso shots
2 scoops chocolate protein powder
chocolate chips (optional)
Topping (mix three ingredients):
1 cup yoghurt
1 tsp vanilla essence
1 tbsp maple syrup
cocoa powder to top
method
1) Preheat oven to 160 degrees celsius. Add all ingredients to a bowl and mix well. Add the chocolate chips if desired.
2) Make sure there are no lumps in the mix and pour into a greased oven safe dish.
3) Bake for 15-20 minutes (it will depend on size of baking dish, if you like it a little gooey remove after approx 15 minutes.)
4) Leave to cool for a few mins, and add the yogurt mix on top. Sprinkle cocoa powder & enjoy warm or cold!
