ingredients (serves 6)
1 cup cashew
1/2 cup macadamias/pecans
½ cup flaked almonds
¼ cup pumpkin seeds
¼ cup uncooked quinoa
pinch sea salt
¼ cup maple syrup
¼ cup smooth peanut butter
2 tsp vanilla extract (optional)
¼ cup flaxseed
For Parfait (2 servings):
1 cup frozen mixed berries (cooked on the hob with tbsp honey)
400g 0% Greek yogurt
method
1) Preheat oven to 150 degrees celsius. Mix all granola ingredients together well (except flaxseed), incorporating maple syrup and peanut butter evenly.
2) Pour onto a lined baking sheet and bake for 10 minutes.
3) After 10 minutes stir well and add flaxseed. Bake for another 10 minutes until golden.
4. Leave to cool fully on the tray - this helps it form those chunky bits!
5) Store in a sealed container.
6) To make the yogurt parfait, add layers of granola, the berry mix and 200g of yogurt and enjoy!
7) This can be made ahead as breakfast prep.
