tuna + sweet potato power bowl

ingredients (serves 1)

1 medium sweet potato
1 tbsp mayonnaise 
15 g cheddar cheese
120 g tuna steak in brine 
30 g cottage cheese
1/4 tbsp rapeseed oil 
1 tsp smoked paprika
1/2 tsp garlic granules
1/2 tsp chilli flakes
1 tbsp chopped spring onion
0.25 tsp ground black pepper
1 g sea salt

method

1) Prep the sweet potato: Pierce the sweet potato a few times with a fork, then microwave on high for 8 minutes until tender.

2) Season and crisp:
Cut the potato in half down the centre, drizzle with rapeseed oil, and sprinkle over your seasonings of choice(paprika, garlic granules, salt, and pepper). Bake or air fry for 5 minutes to crisp up the edges.

3) Add the cheese:
Lay cheddar cheese slices on top and cook for another 10 minutes until melted and golden.

4) Make the tuna mix:
While the sweet potato finishes cooking, combine the tuna, mayonnaise, and cottage cheese in a bowl. Mix until smooth and creamy. Add some of the same seasoning here if you like!

5) Assemble:
Once the sweet potato is ready, top it generously with the tuna filling and finish with a sprinkle of chopped spring onion and chilli flakes.
