We believe in elevating everyday food with purposeful ingredients. A generous 100g of Greek yogurt paired with our Collagen Crumb adds at least an extra 15g of protein, supporting satiety while adding creaminess and crunch.
Then we layer in the good stuff: whether it's the antioxidant-rich berries, natural sweetness from dried fruit and maple syrup, healthy fats from nuts, fibre from chia seeds & desiccated coconut, and spoonful's of fruit compote or curds for depth and balance.

Protein Pancakes

Ingredients:
1 egg
1 banana
½ cup oats
2 tablespoons coconut flour (or use extra oats/desiccated coconut)
1 tablespoon chia seeds
Pinch cinnamon
1 scoop protein powder (your favourite flavour)
½ cup milk of choice (approx.)
½ tsp baking powder
Pinch salt
To serve (included in macros):
100g Greek yogurt
30g oac Collagen Crumb
Optional Toppings:
Fresh berries
Dried fruit
Maple syrup
Chopped nuts
Desiccated coconut
Fruit compote (as seen in recipe video)

Method
1.) Add the oats, chia seeds and desiccated coconut (if using) to a blender or food processor and blitz to a flour-like texture (optional method to separate, but preferable!)
2.) Add all remaining pancake ingredients and blend until ingredients just come together. If the batter is too thick, add a little more milk gradually. (avoid over-mixing pancake batter because it develops excess gluten, resulting in tough, chewy, and flat pancakes rather than light and fluffy ones)
3.) Heat a pan over medium heat and add a small amount of butter, oil or spray. Pour a large spoonful of the batter into the pan.
4.) Cook for a few minutes until bubbles begin to form, flip and cook for a further 2–3 minutes until golden.
5.) Serve with 100g Greek yogurt, 30g oac Collagen Crumb and your chosen toppings.
